Recipe 1: Spiced Winter Lentil & Vegetable Curry (Inspired by Essence by Atul Kochhar)

Nothing warms the soul quite like a spiced, hearty curry packed with seasonal vegetables and aromatic flavours. Inspired by the expertise of Atul Kochhar, this dish makes use of warming Indian spices and fresh produce to create a nourishing winter meal.

Ingredients

190g cup red lentils, rinsed

1 onion, finely chopped

2 cloves garlic, minced

1-inch ginger, grated

1 carrot, chopped

1 sweet potato, diced

1 handful of kale or spinach

1 can chopped tomatoes

1 can coconut milk

1 tsp cumin

1 tsp ground coriander

½ tsp turmeric

½ tsp chili powder

Salt & pepper to taste

Fresh coriander for garnish

Method

  1. Heat a little oil in a pot and sauté onions, garlic and ginger until fragrant.
  2. Add cumin, coriander, turmeric, and chili powder, stirring for a minute.
  3. Add the carrots, sweet potato, lentils, chopped tomatoes and coconut milk. Bring to a boil, then simmer for 25–30 minutes.
  4. Stir in kale or spinach and let it wilt.
  5. Season with salt and pepper, garnish with fresh coriander and serve with fluffy basmati rice or naan.

Recipe 2: Indulgent Chocolate Orange Pudding (Inspired by Hattons)

Winter wouldn’t be complete without a decadent dessert, and Hattons is the place to visit for seasonal cakes and pastries! This rich, gooey chocolate orange pudding is inspired by their love for indulgent flavours.

Ingredients

200g dark chocolate

100g butter

150g sugar

2 eggs

100g plain flour

Zest of 1 orange

1 tbsp orange juice

½ tsp cinnamon

A pinch of salt

Method

  1. Preheat the oven to 180°C and grease a baking dish.
  2. Melt the chocolate and butter together, then mix in sugar.
  3. Whisk in the eggs one at a time.
  4. Fold in the flour, orange zest, juice, cinnamon and salt.
  5. Pour into the dish and bake for 20–25 minutes until gooey in the middle.
  6. Serve warm with cream or a scoop of vanilla ice cream.

Method

  3. Pour in tomatoes and vegetable stock, then add rosemary and thyme.
  4. Cover and simmer for 40 minutes.
