This vibrant event, sponsored by Sankey’s and supported by Great British Kitchens & Interiors and Royal Tunbridge Wells Together, will feature over 20 food and drink stalls offering diverse global cuisines, from Thai and Taiwanese to Caribbean and Mexican. With over 500 products and flavours to sample, there’s something for every palate.

The Feastival will be headlined by MasterChef champion Kenny Tutt and feature renowned chefs like Atul Kochhar and Calum Harris.

Pan-Seared Cod with Lemons & Herbs

If you’re inspired by the seafood offerings at The Pantiles, why not try cooking up a delicious fish dish at home? Here’s a simple recipe using cod, a popular fish featured in Kent’s seafood markets.

Ingredients

  • 4 cod fillets
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 lemon, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped

Instructions

  1. Prepare the Cod: Pat the cod fillets dry with a paper towel. Season both sides with salt and pepper.
  2. Heat the Pan: Heat the olive oil in a large skillet over medium-high heat.
  3. Cook the Cod: Place the cod fillets in the hot skillet, skin-side down if applicable. Cook for about 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.
  4. Add Flavour: During the last minute of cooking, add the minced garlic to the pan and cook until fragrant. Squeeze the lemon slices over the fish and sprinkle with chopped parsley and dill.
  5. Serve: Remove the cod from the skillet and place it on a serving plate. Garnish with extra lemon slices and herbs if desired.
